In Spain the best food often never touches a tablecloth. It's eaten standing at a crowded bar, one small plate at a time, in three bars a night.

How the locals do it

  • One thing per bar — order the dish the bar is known for, then move on.
  • Pintxos in the north — in San Sebastián and Bilbao, point at what's on the counter.
  • Late is normal — bars fill after nine; arrive early and you'll eat alone.
Local moveStand at the bar, keep your napkins on the floor where the locals throw theirs, and let the barman recommend. The busiest bar with the messiest floor is usually the best one.
